Ingredients

  • 2 diced carrots
  • 2 pounds ripe tomatoes, blanched and skinned
  • 7 tbsp apple cider vinegar
  • 2 diced garlic cloves
  • 2 tbsp olive oil
  • ¼ tsp cayenne pepper
  • ¼ tsp allspice
  • 1 tsp sea salt
  • 120 g oven-dried/sunblush tomatoes halved
  • One bay leaf

Instructions

  • First, start by preheating your oven at 180 degrees to dry out the tomatoes.
  • Properly spread ¼ pound tomato halves on a baking tray. Put salt and little pepper; keep it in the oven for 20 minutes.
  • Lightly fry the garlic in olive oil for few minutes
  • Add bay leaf and apple cider vinegar and mix for a minute
  • Add rest ingredients, including over dried tomatoes and turn up the heat.
  • Once it starts boiling, slow down the heat and let it cook for 1 hour.
  • Check for salt and pepper adjust according to taste.
  • Take off from flame, take out the bay leaf and let it cool down.
  • Combine the whole mixture thoroughly till you see that paste reached a smooth consistency.

This sugar-free sauce is served as a usual sauce as dressings in a burger, with chicken and different sausages.
