Follow these steps and get your lip-smacking sugar-free chocolate ice cream prepared at home.

  • Whisk both cocoa powder and half & half together in a saucepan and put that mixture to a simmer over medium heat. Beat the egg yolks and twist together in a bowl until fluffy and light. Temper both the mixtures together by stirring ¼ cup of the chocolate mixture into that egg yolk mixture, and after that, pour it all slowly back into the chocolate mixture in the saucepan. Simmer it over low heat and constantly stir until the mixture thickens and sticks back to the spoon. Take the mixture off the heat just before it starts boiling.
  • Chill the mixture for three hours or overnight. Once chilled, transfer this mixture to the ice cream maker and whisk according to the manufacturer’s instructions. Now, the ice cream is ready to serve, or you can transfer it to a container and store it in your freezer.
  • Make the brandied cherries. Combine the agave syrup, brandy, and cornstarch in a saucepan. Add the cherries and put everything to a boil. Lower the simmer and heat for two minutes. Remove the saucepan from the simmer and whisk in the vanilla extract. You can serve the dessert warm or room temperature spooned over the sugar-free chocolate ice cream.
